In Japanese, Asahi (朝日) means morning sun — the first warm light that turns a day from possibility into action. It's the name we gave our most generous matcha: the one we bake with, the one we blend into ice cream, the one we reach for when matcha needs to be more than a drink or whenever we want a bold matcha.

From the same Kagoshima fields as camellia but harvested later in the season (2nd and 3rd leaves), Asahi captivates with its vivid green hue and rich, inviting aroma. stone-ground from the finest leaves, it delivers a balanced taste with smooth umami and a gentle vegetal finish. mild enough not to overpower a cake or a soft-serve, vibrant enough to make the green color pop. save the ceremonial for the bowl — let Asahi be your kitchen workhorse.

Preparation

Matcha latte

1. Sift 1 tsp (0.07 oz) of matcha into a cup

2. Add 3.4 oz (100 ml) of 176°F water

3. Whisk vigorously for 15 seconds

4. Top with 3.4 oz (100 ml) of steamed milk — dairy or oat work beautifully

Usucha (thin tea, classic bowl)

1. sift 1 tsp (0.07 oz) of matcha into a warm chawan

2. Add 2 oz (60 ml) of 176°F water

3. Whisk vigorously in a zig-zag motion for 15 seconds until frothy

for baking & soft-serve

1. Sift 1-2 tbsp into dry ingredients for cakes, cookies, or pancakes

2. Blend 1 tsp per scoop into softened ice cream or whipped cream

3. Use as a finishing dust on tiramisu, mochi, or cheesecake
