Camellia is named for the plant itself — Camellia sinennsis, the small evergreen behind every cup of tea in the world. We chose it because this matcha is the most honest expression of what milk-based matcha drinks should taste like: real tea, not green syrup.

Stone-milled from second-harvest Kagoshima leaves, camellia delights with its vivid emerald green and rich aroma. It offers a round umami, the lowest bitterness of any grade in our collection, and a perfect balance. whisk it for a beautifully clean Usucha, or steam it into a latte where the color holds and the flavor doesn't fade behind milk. this is the matcha real baristas reach for when no one's watching.

Preparation

Matcha latte

1. Sift 1 tsp (0.07 oz) of matcha into a cup

2. Add 3.4 oz (100 ml) of 176°F water

3. Whisk vigorously for 15 seconds

4. Top with 3.4 oz (100 ml) of steamed milk — dairy or oat work beautifully

Usucha (thin tea)

1. Sift 1 tsp (0.07 oz) of matcha into a warm chawan

2. Add 2 oz (60 ml) of 176°F water

3. Whisk vigorously in a zig-zag motion for 15 seconds until frothy

Koicha (thick tea, ceremonial)

1. Sift 2 tsp (0.14 oz) of matcha into a warm chawan

2. Add 1 oz (30 ml) of 176°F water

3. Mix slowly, moving the whisk back and forth — no froth, just a thick, paint-like consistency
