In japanese, hikari (光) means light — the kind of clean morning light that wakes the whole world up. It's the feeling we wanted in a bowl: bright, quiet, alive.

Hand-picked from the first spring harvest (一番茶 ichibancha) and stone-milled in small batches, hikari is a superior-grade ceremonial matcha built for the purist. an aromatic, perfectly balanced cup — its intense umami gives it an unforgettable full-bodied and creamy flavor. whisk it as usucha for an everyday bowl, or as koicha for a thick, contemplative ritual. either way: no sugar needed, no milk needed.

Preparation

Usucha (thin tea, classic bowl)

1. sift 1 tsp (0.07 oz) of matcha into a warm chawan

2. add 2 oz (60 ml) of 176°F water

3. whisk vigorously in a zig-zag motion for 15 seconds until frothy

Koicha (thick tea, ceremonial)

1. sift 2 tsp (0.14 oz) of matcha into a warm chawan

2. add 1 oz (30 ml) of 176°F water

3. mix slowly, moving the whisk back and forth — no froth, just a thick, paint-like consistency

Matcha latte

1. sift 1 tsp (0.07 oz) of matcha into a cup

2. add 3.4 oz (100 ml) of 176°F water

3. whisk vigorously for 15 seconds

4. top with 3.4 oz (100 ml) of steamed milk — dairy or oat work beautifully
