Hojicha (焙じ茶) is roasted green tea — a craft developed in 1920 Kyoto when a tea merchant tried roasting leftover leaves over charcoal to reduce waste. The result was a deeply toasty, naturally lower-caffeine tea that became one of Japan's most beloved everyday drinks.

Our hojicha is roasted in Uji, Kyoto using traditional methods, then finely milled into a powder that whisks just like matcha. It offers a smooth, smoky, nutty, and cocoa-like flavour, with only 50% of the caffeine found in matcha. popular in lattes and baked goods — and gentle enough to enjoy long after the sun goes down.

Preparation

Hojicha latte

1. Sift 2 tsp (5.5 g) of hojicha powder into a cup

2. Add 3.4 oz (100 ml) of 176°F water

3. Whisk vigorously for 15 seconds

4. Top with steamed milk and a dusting of cinnamon, if you like

Hojicha bowl (whisked)

1. Sift 2 tsp (5.5 g) of hojicha into a warm chawan

2. Add 2 oz (60 ml) of 176°F water

3. Whisk vigorously for 15 seconds

For baking

1. Sift 1-2 tbsp into cookies, ice cream, or granola for a toasty cocoa note

2. Perfect in shortbread, financiers, and crème brûlée
